Naked Burrito Bowl

Ingredients

  • 100g Chicken Breast
  • 4g Coconut Oil
  • Smoked Paprika
  • Chilli Flakes
  • Mushrooms – sliced
  • Sweet Red Pepper – sliced
  • Plum Tomatoes
  • 20g Avocado
  • 30g Fage 0% Greek Yoghurt
  • Brown Basmati Rice
  • Iceberg Lettuce
  • Brown Basmati Rice
  • 50g Black Beans

 

Method

  1. Chop your chicken breast into small pieces and season with the smoked paprika, chilli flakes and salt/pepper to taste.
  2. Heat the coconut oil in a pan and stir fry your chicken breast on a medium heat. I find that covering the pan for 5 minutes initially really helps the chicken remain tender and moist.
  3. Add in the mushrooms, red pepper and cook for 5 minutes.
  4. Smash your avocado in a bowl with salt and pepper and a squeeze of fresh lemon juice
  5. Mix your cooked rice with black beans.
  6. Serve in a bowl and enjoy!
