Eggs baked in an avocado | U Fit Studio

Ingredients

1 whole avocado, halved, stone removed (weighed approx 150g)
2 eggs
Smoked paprika
Salt, if desired
Plenty of steamed broccoli

Method

Wipe a piece of kitchen roll dipped in olive oil round a small oven proof dish, then place the avocado halves in – so they can’t fall over. Carefully crack each egg into each half and dust lightly with paprika. Place in a hot oven (200 degrees) for approx 15 mins until the white is cooked through.

Serve with the steamed broccoli or whatever greenery you like best
